I just had the most delicious treat. I went to the kitchen looking for a snack and found mushrooms and spinach in the fridge that needed to be eaten. So I threw this together in about 10 min and it was sooooo yummy!
- Small pat of butter or a little olive oil if you want to be healthier
- Handful of fresh mushrooms sliced in large pieces
- Small handful of raw slivered almonds
- About 2 cups washed fresh spinach (You can substitute any greens you have)
- 1/2 tsp lemon juice
Melt the butter over medium heat.
Toss in the almonds and mushrooms. Saute until mushrooms are cooked.
Add Spinach and lemon juice. Saute until Spinach just starts to wilt.
Serve immediately. Yum! I ate it so fast I didn’t get a picture.
